Breakfast: PB Overnight Oats
ingredients:
1 and 1/2 cups Oats (quick or rolled)
1 and 1/2 cups Unsweetened Almond Milk
1/4 cup All Natural Peanut Butter
2 tbsps Chia Seeds
2 tbsps Maple Syrup
1 tbsp Cocoa Powder
1/2 cup Water
directions:

Combine oats, almond milk, peanut butter, chia seeds, maple syrup, cocoa powder and water in a large glass container.

Stir well to evenly mix.

Cover and store in the fridge overnight.
Notes:
Leftovers
Refrigerate in an airtight container for up to four days. Add an extra splash of almond milk and/or a drizzle of honey.
WARM IT UP
Heat in microwave for 30 to 60 seconds before eating.

Lunch: Simple Tuna Salad
ingredients:
1 can Tuna (in salt water, drained)
1/2 Green Apple (chopped)
1 stalk Green / Spring Onion (finely sliced)
1 tbsp Mayonnaise (fat-free)
Sea Salt & Black Pepper (pinch, or to taste)

Add all ingredients to a large bowl.

Mix until well combined. Enjoy!

Dinner: Shiratake Noodle Stir Fry
ingredients:
225 grams Shiratake Noodles
1 tbsp Avocado Oil
1 Orange Bell Pepper (sliced)
1 Zucchini (medium, sliced)
227 grams Chicken Breast (diced)
2 tbsps Coconut Aminos
1 tbsp Hot Sauce (or to taste)
1 tbsp Sesame Seeds
Notes:
SHIRATAKE NOODLES
A high-fibre pasta alternative made from the konjac root. You can find them at most grocery or health food stores, often in the refrigerated natural foods section. If you avoid soy, be sure to check the ingredients as some brands use soy flour.
VEGAN Option
Use mashed tofu instead of chicken.
VEGETARIAN Option
Use scrambled eggs instead of chicken.

Drain and rinse the shiratake noodles. Add them to a small saucepan and cover with water.

Bring noodles to a boil for about 5 minutes, then drain and rinse again.

In a large frying pan or wok, heat the avocado oil over medium-high heat.

Add the sliced bell pepper, zucchini, and chicken. Cook for about 10 minutes, until the chicken is cooked through.

Add the coconut aminos, hot sauce, and shiratake noodles to the pan. Toss to coat, then transfer to bowls.

Sprinkle with sesame seeds and enjoy!
